It seems that printing to PDF does not set a reasonable font size like
"11 point", but instead it sets "1 point" and then scales the text by a
factor 11. Since the Latex fonts you are using do not have a 1-point
size, they use the smallest size they have and then magnify by 11 times.

Converting PDF text to Ipe text isn't easy, as Latex has many
restrictions on font size.

It might work better if you had a better way to create a PDF file from
your graphics. The statistics software cannot save in a readable
format? (SVG or FIG would be useful intermediate formats.)

The simple way, of course, is to say "Select all" (Ctrl+A), and then
click "normal" in the text size selector. This will change all text to
normal size.
