Off Topic - How do I Set My Mail?

I had a computer meltdown a month ago, and although we now have a shiny new
flashy machine... all my old instructions and such which were carefully stored
on the (fried)  harddrive are gone.

So I would appreciate instructions on how to pause the list while I head for
New Orleans and get a few things caught up in my real life.
