With cold weather approaching, I would be a bit leery of leaving the newly
sprouted seedlings out. Even if the species is hardy for you, the seedlings
would be unlikely to get enough growing time to form survivable tubers.

I think the safest thing would be to pot them up and let them grow indoors
for the full growth cycle, then refrigerate the tubers and plant them out in
the spring.

I could be wrong, but I see no harm in doing it this way.
