I think that it is only an odd behavior, nothing more. I also observed that
on 1 (over 100 maybe) specimen of A. serratum in my garden. I took a photo
of its monoecious spadix. But this is well known, J. Murata studied such a
behaviour in one of his papers.
To my knowledge, A. iyoanum usually shares the paradioecious habit of its
brothers.

Do you really consider this odd behavior, or just a process that happens in
many species as the plant changes from male to female, and is hardly ever
noticed?
Mike Slater has seen this happen in A. candidissimum as well, and I do
wonder if it isn't a fairly common happening and might explain the occasional
seed production from a solitary plant that is thought to be a female of a
dioecious species.
