Guy, there are more than one seedling exhibiting this behavior and in
different parts of the country to boot. It's definitely not environmental
and must be "in the plant". They don't look strange at all--they just have
more than one leaf. It's a petiole, not a rhizome. The first leaf out is
maturing a bit faster than the second so one is shorter than the other for
now. The first leaf hasn't even unfurled yet.
